When you cut and prepare your own steaks, it is important to decide how you age them because it makes a major difference in how they cook and, ultimately, how they taste on the plate. We choose to wet age steak at Piguet’s Prime Time.
At Piguet’s Prime Time, we always serve locally grown meat, usually our own. We also hand-cut our steaks including these steak cuts that you will find at our new restaurant and events. We also always wet age our meat and get asked about it a lot. We are seeing more and more that people searching for caters or really high-quality steak houses want to know how we age our beef so thought it would be good to discuss the difference between wet and dry aging here.
Different preparation
Wet aging involves a process including vacuum sealing the meat in a plastic pack that is then stored at a consistently cold temperature for 55 days. That method slowly draws out the excess moisture and tenderizes the meat naturally. This enhances the flavor and really draws attention to each cut’s unique nature.
Dry aging, on the other hand, is aging the meat by leaving them chilled but exposed to the open air. The idea is that this allows the natural microbes to work on the meat to tenderize it. The reason we prefer not to dry age is that the process alters the beef’s natural flavor. 
Pride in our beef
We take profound pride in our beef, especially in the quality and amazing flavor. It’s a major part of what our family has become known for both in our events and now our restaurant. We never want to sacrifice that quality and unique flavor by using a simpler method. A part of the reason we hand-cut each steak is that it provides more customization and individuality for our customers. For example, we can do the same basic cuts but a “little on the small/big side” or with a requested amount of trimmings.
Another thing we do to preserve our beef’s flavor is chosen thicker cuts instead of thin and flat. The thicker the cut, the more flavor, and natural moisture is maintained in the beef during cooking.
