Fall recipes to delight taste buds

It’s gotten cold in Northeast Oklahoma, with many places in the state even getting snow. Many people are starting to crave soups, autumn salads, and of course, all thing pumpkin! I wanted to share a few of my go-to recipes for your family or even entertaining. 

Many of these you can still find seasonal produce and other locally grown foods, which will make your dishes even more fresh and delicious! I’ve used hundreds of recipes over the years, some passed down to me from family members and others I’ve discovered on the internet. 

The first fall recipe I wanted to share is my own adaptation of this Bacon Pear Cobb Salad recipe from the Reluctant Entertainer. My only change is to add finely chopped green onions. 

“Bacon Pear Cobb Salad Recipe is a delicious side, lunch, or main dish salad with slices of pears, avocados, eggs, and blue cheese dressing!” she says in her blog. 

I agree! The Bartlett Pears combined with the blue cheese, avocados, and other distinct ingredients blend together to make a sweet and tangy salad that is both beautiful and nutritious. 

Another favorite is the Roasted Tomato Basil Soup from Ina Garten on Food Network. For this one, I would add two cups of whipping cream at the end of the cooking process to add to its richness and enhance the flavor. This recipe can be served hot or cold, whichever your family prefers. This recipe is so much better than anything you can get from a can or even most restaurants! 

Finally, I wanted to share one of my own recipes. This recipe is for Pumpkin Dip and it’s amazing for serving with sweet apples, salty pretzel sticks, or even cinnamon sugar graham cracker sticks. 

This recipe is super simple. Simply mix together these ingredients: 

  • 29 ounces of pumpkin pie filling
  • 1 small container of Cool Whip
  • 1 5-ounce package of Instant Vanilla Pudding (no milk).

For added fun and to make it attractive for guests, you can serve this dip in a hollowed-out sugar pumpkin.
