Steak cuts to expect at Piguet’s Prime Time
As the opening of our restaurant gets closer and closer, it’s time to start sharing about the amazing menu you will find when you visit. We will have a wide variety of options, but of course, anyone who knows our family knows we will have the best steaks you’ve ever tasted!
Our steakhouse will have wood-fired steaks of a variety of amazing cuts to choose from. Here is what to expect:
Baseball Cut
This is cut like a filet, but it’s part of the sirloin so it’s a less expensive option. We trim the sirloin so you have the best part of that cut, which comes from the animal’s back region.
Ribeyes
This cut is from the animal’s rib area and is usually from the “eye” or the entire steak rib. This cut tends to have a lot of marbling, which makes for a very juicy steak. It often tends to be a little larger. We expect this one to be popular!
Filet

The filet is the smallest cut, but it’s also the most tender. It has less fat content than the ribeye, making it less juicy but its tenderness is what draws people to choose this cut. The filet mignon comes from the smaller end of the tenderloin.
KC Strip
Also from the loin area, the KC Strip is fairly similar to the New York strip. The KC Strip is from the short loin and that helps make it one of the juiciest, most flavorful cuts.
Brisket
This cut is seasoned and smoked to perfection. Brisket comes from the cow’s chest.
Tri-tip
Tri-tip comes from the bottom (“tip”) of the sirloin. Its name comes from its triangle shape and the fact that it is from the very tip of the sirloin. Not as well known, this cut is flavorful and delicious when smoked.
BBQ offer
We will be offering some BBQ dishes, and those cuts are also from the front of the cow.
No matter which cut you choose, you will be getting high-quality, flavorful beef. We cut our own steaks and grind our own hamburger. We raise our beef and even the hamburger comes from a Wagyu cross, which tells you it will be a richer quality beef.
We talk about farm to fork all the time and that is what you’re getting with our steak. Carolyn’s family has raised cattle for generations and we know the value of a fantastic steak when you want to celebrate something special.
